Fresh Produce Quality Specifications – Tomato

This document is a guide to the key quality criteria which should be observed when purchasing and supplying tomatoes and is the first in a series of fresh produce quality specifications that will be produced and published over the coming months.

Please be aware that these specifications only reflect what our inspectors and technical staff would consider to be well established industry standards, commonly held knowledge and our own expertise in having conducted thousands of food quality inspections over the past 20 years throughout the UK food industry. If we have made any direct reference to another source it will be referenced clearly within the text.

Size Requirements for Tomatoes

These fruit are typically supplied in grades which are fairly well recognised in the fruit trade, with the following sizes being the most usual:

Size MMM: 40mm – 47mm

Size MM: 47mm – 57mm

Size M: 57mm – 67mm

Common Pack Sizes

Tomatoes are usually distributed in open topped corrugated cardboard boxes of 6kg. They will often be further packaged for distribution within the UK depending upon the industry sector being supplied, often seen in 1kg bags or punnets. Cherry tomatoes are often seen in punnets of 250g, packed 12 to a box.

Common Quality Defects Found in Tomatoes

We break quality defects typically into major and minor categories, with no tolerance recommended for the former, and a small tolerance recommended in the latter.   • Major Defects

Minor Defects

  • Sizes outside of the stated grade (see above)
  • Colour not meeting the specific ripeness requirements for the customer
  • Surface Scarring or Russetting
  • Minor cracks to the Surface
  • Minor signs of age such as wrinkling and softening fruit

Distribution Temperatures for Tomatoes

Distribution temperatures for this product are usually between 12C – 15C It should be noted here, that in most mixed product distribution scenarios, Tomato along with most other fresh produce is grouped into the chilled storage and distribution network which would be expected to run below 6C.

Hawaiian Cruise Aboard Norwegian’s Pride Of America

I recently spent some time visiting most of the major islands that make up Hawaii. This was my first trip to the 50th State, and I had a hard time making a decision about where to stay when I got there. I spent countless hours scouring the internet and various forums to get an inside scoop as to what island I would enjoy the most. What I found is that each island has a great deal to offer, and my ideal vacation would be spent seeing them all. That’s where Norwegian’s Pride of America came to the rescue.

THE SHIP

Norwegian Cruise Lines -Pride of America set sail in 2005, and she is the first US flagged ship built in nearly 50 years. One look at this glorious vessel; and you can tell that the name “Pride of America” goes further than just the lettering on the outside. Everywhere on this boat you are reminded of what a great country the United States is, and most of the lounges, restaurants etc… have an American theme. Some reviewers have commented that they felt this was too tacky, however, I beg to differ, to an extent, these ships are all tacky, and this one seemed to fit

the bill, however, the décor was tastefully done, and the layout of the ship itself was very functional.

One major difference on this ship is that the majority of the staff are American Citizens. The online forums are filled with mixed reviews on the level of customer service they received while onboard. Many attribute this to the staff being American; however, I find this to be much too narrow of a thought process. I did find certain instances where the service was lacking, however, you’re on vacation, try to ignore these limited instances and enjoy yourself. For the price you’re paying for what you experience, it can be overlooked.

Leopard gecko prices can range anywhere from very low to very high, depending on what you’re looking for.  They are one of the cheapest pets, starting at $20 for a full grown adult.  If you want a special breed, you can expect to pay as much as $200.

There are some human foods that are safe to share with your four legged friends.

Some human food that dogs can eat:

Air Popped Popcorn – popcorn is OK as long as it’s air popped and salt and butter free.

Fresh as well as frozen berries are fine. Watch out for seeds in melons and apples.

Oatmeal – Duke loves steel cut oats with blueberries for breakfast. He shares just about 1/2 tablespoon with me most mornings.

Peanut Butter – Dogs do not appear to be sensitive to peanuts. You should watch out for peanut butter that is high in sugar and/or salt though.

Sunflower Seeds – Shelled sunflower seeds, preferably without salt and only in small amounts.

Rice – boiled rice is bland but it’s easy on your pooches stomach. Salt free rice cakes are OK too.

Vegetables – broccoli, carrots, green beans, peas, squash, sweet potatoes, potatoes (no green skin, sprouts or flesh)

My dogs LOVE tomatoes. Some people say that you shouldn’t feed your dog tomatoes but my research tells me that they’re OK in small amounts. It’s the actual tomato plants themselves that are poisonous so watch out for the stems.

Of course there are some foods you should never feed your dog. Some you may be aware of and some you may not. In doing my research I was surprised by some of them myself.

Making Rock Candy at Home Is Easy

If you are considering making candy at home, you will be hard-pressed to find one as trouble-free as rock candy. Lollipops are fun, and truffles and bonbons are possible, but they are all increasingly more demanding to make, so try rock candy first and get the utmost gratification for the least effort!

Here’s a simple and foolproof recipe how to make rock candy at home

Rock candy is so simple, it is the best possible choice of the many available options you have for making candy at home.

Start by attaching a light weight, even a paper clip will do (avoid the temptation to use “split shot” from the tackle box as these are made from lead), to the bottom of a piece of cotton string to weight it down and ensure it hangs straight when suspended. Tie one end of the string to the center of a pencil, so that when placed over the opening of a jar, the thread ends about an inch from the bottom. Prepare the string by wetting it and rolling it in some granulated sugar then setting it apart to dry. This procedure prepares a base layer for the sugar crystals to form upon when next we add the sugar solution.

Now, cook the sugar syrup. You can create sugar syrup by adding 2 cups granulated sugar for each 1 cup of water and bringing the solution to a boil. If you have a candy thermometer make sure the temperature reads 265 degrees Fahrenheit, if you don’t, boil for about two or three minutes for all the sugar to fully dissolved.

Careful! Hot sugar syrup requires care and cautious handling as it will burn badly if touched.

At this stage transfer the pot from the burner and add flavoring such as peppermint or lemon extract and a little food coloring if you wish. Stir them in with the minimum number of strokes. When the syrup is ready, pour it into the jar.

Now, lower the string you prepared earlier into the jar and cover it all with a towel. Within 2 to 4 hours you will start to see sugar crystals forming. Keep an eye on it and remove your rock candy from the jar before it is too big to clear the opening! That’s all there is to it! Pretty easy, right?

Another hard candy that is uncomplicated to create at home is lollipops. Use 1 cup of water, 3-1/2 cups granulated sugar, and 1-1/2 cups corn syrup. With these ingredients combined in a saucepan over medium heat (never high heat!), watch for the sugar to start dissolving. Bring to a boil and at this stage discontinue stirring until the temperature rises to 300 degrees Fahrenheit. A candy thermometer is indispensable for this process. Now, withdraw from the heat and add your flavor and color. Stir quickly using the fewer strokes the better to avoid undesirable grain in the completed candy.
